Bec is coming over for dinner tomorrow night and I'm making tacos, Spanish rice, refried beans, a chilled Mexican four bean salad and flan. If the ravenous masses will give me a little space in the kitchen when I finish cooking I'll take a picture of food p0rn before they descend on it.

I made flan for the first time a couple of weeks ago. I didn't have the proper ramekins, so I made giant flan with over safe soup bowls. It was a spur of the moment thing. It was my first time making caramel too. They were okay.

I'm going to try this recipe because it has a little cream cheese in it and that might smooth it out and help it hold together better. www.food.com/recipe/best-flan-ever-106430And if it falls apart in spite of the cream cheese, I'm still going to eat it because it's flan.

That sucker cracked right in the middle! And the crack is so deep that it reminds me of deep seafloor spreading in the Mariana trench.

I made Chicken Luau yesterday for mah Hawaiian birthday party. First time I ever tried that dish. It went over pretty well, but I know it would've been better if I had used a better coconut milk (long story). The pineapple upside-down cake that my friend baked was excellent!
*EDIT* Here's the receipe:
Chicken Luau 2 lbs. Chicken thighs 2 packages thawed chopped spinach 1 can coconut milk 1 teaspoon sugar Onion chips Preheat oven to 375°F. Combine the ingredients in a baking dish, pouring the coconut milk over the top. Bake about 1 hour till the chicken is done. Thicken with a paste of cornstarch and water. Season with salt as needed.
I put in a fresh chopped onion, honey instead of sugar, and wheat germ instead of cornstarch. Where I messed up was in using a coconut milk "beverage" instead of plain coconut milk. Live and learn...
