So, I'm making cranberry-orange muffins. I've seen muffins where the top has slightly crisp texture with big knobby sugar. how is that done?

I'd suggest you ask our resident master baker (hehe!) but he hasn't registered on the new board here. You could always chase his skanky azz down on Facebook, though.
This really is something he'd know. The answer is probably so simple that it'll be like the first five minutes of class on the first day of Baking 101 to him.
